Maturing the wine in oak barrels and wine vats along with making and bottling the wine is all carried out by us at our domaine.
You are welcome to come and taste our wines everyday of the year, individually or as a group. All our wines are available for sale on site.

The wine making process
In our domaine
The wine making is traditional
The grapes are harvested both manually and mechanically
The grapes arrive at our domaine and pressed with a pneumatic winepress, which has the advantage of pressing the grapes with precision and care.
The juice is clarified for about 12 hours using a sedimentation process
Some of the juice is vinified in temperature controlled steel vats, the rest is maintained in oak barrels.

The alcoholic fermentation for white wines is created entirely from the natural yeast of the grapes.
The wine then goes through a malolactic fermentation, which gives more smoothness and roundness to our wines.
The wine is extracted in the months of May/June. We blend together the wine from the barrels into the big vats to make a homogenous vintage. Bottling begins in Spring for the early vintages, while Pouilly Fuissé vintages are left to mature for longer and are bottled at the end of the Summer.
